  1. Heat the oil in a karahi or wok over medium heat.
  2. Add the sliced onions and cook until they become golden brown in colour.
  3. Add the ginger and garlic paste and fry for a minute.
  4. Add the chopped tomatoes and green chilies, and cook for 4-5 minutes or until the tomatoes become soft.
  5. Add the mutton or lamb pieces and stir fry until they are no longer pink.
  6. Add the red chilli powder, turmeric powder, cumin powder, coriander powder, and salt. Mix well and cook for 5-6 minutes.
  7. Cover the karahi and let it simmer on low heat for 30-40 minutes or until the meat is fully cooked and tender.
  8. Add Garnish with fresh coriander leaves and serve hot with naan or rice.
