Aloo Gosht (Meat and Potato Curry)

Aloo Gosht

Aloo gosht (Meat and Potato Curry) is a popular dish from Pakistan and North India that combines tender lamb or mutton with potatoes in a flavorful and aromatic curry. This hearty dish is often served with rice or bread and is a staple in many households across the region. The word “aloo” means potato and “gosht” means meat in Urdu and Hindi.

To make aloo gosht, the first step is to prepare the meat. You can use either lamb or mutton, and it’s important to cut the meat into small pieces that will cook quickly and evenly. Next, you’ll need to sauté some onions in oil until they’re golden brown. This adds a sweet and savoury base to the dish.

Once the onions are cooked, you can add garlic and ginger to the pan, which will give the curry a pungent and fragrant flavour. Then add the meat and cook until it’s browned on all sides. At this point, you can add your spices, such as cumin, coriander, turmeric, and chili powder, which will give the dish its signature flavour.

Next, add the potatoes to the pan, along with some chopped tomatoes and green chilies. This will help to thicken the sauce and give the dish a slightly sweet and tangy taste. Cover the pan and let everything cook together until the potatoes are tender and the meat is fully cooked. You can adjust the seasoning to your taste, adding more salt or spice as needed.

Once the dish is finished, garnish it with some fresh cilantro leaves and serve it hot with rice or bread. Aloo gosht is a comforting and satisfying dish that’s perfect for a family dinner or a special occasion. Try making it at home and experience the delicious flavours of Pakistani and North Indian cuisine.
